The most important thing to do when cellaring wine is to have the wines in order. Generally you would start by variety, region and then vintage. For example:- Chardonnay – whilst we would love everyone to stock our chardonnay it is important to diversify your wine purchases, do not stay in the one region, try Mornington Peninsula, Yarra Valley, Hunter Valley, Tumbarumba, Great Southern and maybe even some Burgundies. The 2020 Vintage has come to an end and what a rollercoaster it has been. We were very lucky through the summer bushfires not to have been directly affected. We are also very fortunate and can happily announce our Lenswood vineyard was free of smoke taint.
